Lately I’ve taken a laid-back approach to life, mostly (and only) because I can. I’m currently in-between projects at work, meaning that I essentially have nothing to do while I wait for my next project. I finally feel like I’m getting some time to myself. With the end of the bustling holidays and people-overload, a little lonesome time at home is exactly what the doctor ordered. Speaking of doctors, I finally kicked the cold/flu out of my system. Yesssss I can breathe again!
Lately, my meals have been simple yet satisfying. After weeks of eating waffles for breakfast, I finally re-introduced steamy oatmeal back into my life. Confession: the only reason I didn’t make a waffle today was because I was all out of flax seed! Blessing in disguise?

My lunches have been a mixture of take-out and homemade. I was overtaken by a rare red meat craving yesterday after my chiropractor appointment, so I made a pitstop to Protein Bar where I picked up this burrito filled with quinoa + cheddar cheese + black beans + organic steak.

I also ordered a raw juice (spinach + kale + pineapple + cilantro + ice) as well as a chicken & spinach pesto quinoa bowl for my parents.

Today’s lunch was a bit different but equally delicious (and tasty!):

(grilled cheese with avocado, mustard, cheese, spinach, and tomatoes on sprouted flax bread)

As usual, dessert has been my favorite part of any and every meal.

This little bad boy looks naughty but is actually sinfully healthy and decadent. Topped with vegan coconut vanilla bean whipped cream!

I used this amazing (vegan!) recipe - my entire family loved the pie! Confession: I replaced dinner with two slices of this chocolatey heaven last night…oops
Lately, I’ve been taking full advantage of this temporary “free time” to actually visit all the doctors I’ve been avoiding for way too long.

Thanks, dentist! I needed a new toothbrush.

Victoria’s Secret Semi-Annual Sale (round 2 in less than a week :/ ) + old, fugly, ripped pajamas = a ton of brand new sleepwear for dirt cheap! I never understood the obsession with VS pajamas and clothing in general but now I totally get it. It’s like wearing a cloud on your body!
Lately, I’ve just been plain cozy. Too bad this is short-lived…

How come the best time to relax is always during the work week, rather than when we’re meant to relax (weekends, holidays)?? Haha. I always want to just unwind and relax on weekday nights, and not worry about homework and such. I can actually get quite bored on the weekends

Haha right? One of the paradoxes of life I guess… I get super lazy during the weekends! I swear I’m more productive when I have a ton of work to do.

A little bit of downtime is always a good thing, especially after the craziness of the holidays. Things have been pretty quiet for me around here as well, and I find that’s usually the case around this time of year. With Christmas gone, it seems like people are just kind of waiting for winter to be over and Spring to come – at least I know that’s the case for me. I think I need to go on vacation to someplace warm and sunny
I completely agree. And while I miss the holidays, I’m glad that nothing is really looming in the near future. The only thing I’m eagerly awaiting is Spring! You should definitely escape to somewhere warm! What’s a better excuse to do so than snow and freezing temps?

Oh I always scold myself for taking my health for granted whenever I’m sick! We’re all guilty of it at some point :/
pvBody is a service where you pay a monthly fee and they send you a workout top and bottom every month based on a quiz you take online to determine the type of clothes to send. I was excited about it at first but I’m very disappointed with the service (they never gave me my discount) and cancelled my subscription after 2 months. Other people have had more success though.
